Pear Pecan Salad

I’ll be honest, I’m not a very big fan of salad… I never have been. That’s why when I created my Transition to Health Cookbook, it was important to me to find salads that I actually like that I could include.

This is a great salad for those who, like me, aren’t the biggest fans of leafy greens on a plate. The pear really gives it a sweet, delicious taste.

Ingredients

  • 4 cups arugula or spinach
  • 4 large ripe pears
  • 1/2 cup cranberries or pomegranate seeds
  • Handful of pepitas

Directions

  1. Wash and dry greens.
  2. Wash and cut pears into bite-sized pieces.
  3. Combine all ingredients in a bowl and serve with “Balsamic Vinegar dressing”.
